GRAY & SEDDON
is a privately owned Anglo-Australian company that specializes
in selecting premium
quality tea from gardens in China and Japan. G&S takes great
care sourcing and packing its premium tea to ensure its listings
retain seasonal freshness and complexity of flavour characteristic of origin.
Gray & Seddon was formed in 1995 by two tea enthusiasts committed to drinking
the best artisan teas still in production.
The company has attained high standards for its
listings by fostering direct and personal links with growers, regional tea
co-operatives and tea-makers in several of its key supplies. Gray & Seddon today
remains a company of tea enthusiasts. One that actively takes part in the tea-making
process; annually visiting gardens and tea-makers to research seasonal variations &
other production quality issues.
G&S went on-line in March 1997 as a tea information resource. Now the business promotes
its seasonal listings to fine tea drinkers and enthusiasts all over the world by shop retail
and Internet-mail order. In 1999 we introduced some of the first certified organic
tea herbals originating from the state of Tasmania as well as promoting the rarest organic
green and oolong teas from China. Since 2003
we have pursued production improvements and innovation with our associates with the
introduction of a range of premium tea bag products and low-caffeine seasonal green teas.
The Gray & Seddon website presently supports over 90 Premium Teas in what is
quite probably the largest portfolio listing
of limited production teas still being made by artisan producers.

David Gray and Brian Seddon survey hundreds of artisan teas
each year travelling to some of the remotest areas in China and elsewhere.
The G&S business promotes only those
which are exceptional for their seasonal freshness,
complexity of flavour and originality.
So whether tasting oolongs at Anxi, grading Fuliang Blacks,
sourcing PQM Dragon Well,
the earliest Sechibaru sencha,
or sourcing aged Xishuangbanna pu'ers
and the many fragrant leaf-bud green teas at Yellow Mountain, only the best of the year's
production will make it to the G&S portfolio of teas.
SEASONAL TEAS OF ORIGIN
freshness, origin and seasonality
G&S has established its business as a quality supplier of all classes of tea;
emphasizing freshness, origin and seasonality. Every season our procurement policy
is to acquire
a listing of teas that is largely unobtainable. Our present portfolio consists of
teas that are: (i) seasonally selected, (ii) artisan often handmade, low production,
(iii) sourced
from gardens of known origin. Tea gardens visited by Gray & Seddon which can guarantee
high standards of garden management and quality manufacturing,
(iv) characteristic of origin and defined by their superior quality and organolepticity.
Many of these attributes can only be satisfied by the smaller, family-run tea
producers. People who know their region's traditional tea well and can skilfully
make them to high standards. G&S associate gardens and suppliers are also acutely
aware of the diminishing returns
associated with the use of chemical fertilizers and pesticides. That is why the Gray & Seddon
tea listings originate from gardens that practice green cultivation as a way of life.

Expert Oolong Taster & Chinese Green Tea Specialist
DAVID GRAY
is a practising Lawyer in the state of Victoria,
Australia. He has an in-depth working knowledge of China and a lifelong passion
for Chinese tea, which he has pursued on his many visits to the country. Having
both studied Chinese language and worked in China for several years, making
more than a dozen visits to the region since 1987, he has acquired expert
knowledge on some of China's remotest tea growing areas. David is a formidable
tea taster as well, with one of the best palates in the business for Taiwanese and Fujian
oolongs. He has more recently been developing a deeper
understanding of the whole-leaf & cluster varieties of green tea
originating from Anhui province. Since
1995 he has put all his experiences into securing "the unobtainable" for Gray
& Seddon. David manages Gray & Seddon operations
in Australia, the main Internet mail-order business, as well as the company's

The Melbourne tea-shop is located at 173 Centre Road, Bentleigh in Melbourne's
south-east. The Tea-shop holds a fine list of black & green teas,
as well as some unique Fujian & Shantou oolongs too. As with all Gray & Seddon
listings, the teas are seasonally
selected, have organic or low residue status, and were acquired by G&S from their
place of origin.
For budding tea connoisseurs, we hold tea tastings every Friday and weekend, between
10.00 am and 3.00pm. We're always happy to have a friendly chat on issues
relating to good tea.
MONTY WILKINSON has recently been working each weekend between 10.00 am
and 3.00 pm, and in between serving customers has become quite adept at
packing tea and doing the paperwork. Originally from South Carolina USA,
Monty has lived in Australia with his Australian born wife Jenny for nearly
20 years. His Southern twang can still be detected! Shop

Sencha & Gyokuro Specialist
BRIAN SEDDON
is a Chemist with a PhD (chemical sensors), Edinburgh University, Scotland.
He acquired an interest
in tea chemistry in the mid 1990s, reviewing the quality and processing
conditions influential to green and oolong tea manufacture. He has worked and
lived in China and Japan, visiting many of the most highly acclaimed tea-growing
regions over the past years for Gray & Seddon. Since 2000 he has researched
and written on many aspects of the steamed manufactured
green teas of Kyushu
island. The business now relying on his expertise with regional sencha and the
traditional gyokuro teas for its seasonal listings.
He is also responsible for publishing the
company's monthly newsletter "The Tea Business". A free newsletter for G&S clients devoted
to tea industry issues. His main responsibility is the
dissemination of Gray & Seddon messages concerning the
seasonal nature of origin teas and the relationship between their quality and market price.
